FERMIPAN YEAST RECIPE
CINNAMON BUNS 1 recipe for Two Hour Buns ¼ cup melted butter ½ cup brown or demerara sugar ½ cup raisins 1½ tsp. cinnamon Prepare basic Two Hour Buns recipe. After the second 15-minute rising of dough, prepare as follows: Cut dough in half and on a lightly floured surface, roll to 16" x 8" rectangle. Combine butter, sugar and cinnamon. Spread over dough. Sprinkle with raisins. Roll lengthwise as for jellyroll. Seal edge; cut in 1" slices. Place cut sides down in greased 9" x 9" x 2" pan. Cover and let rise 1 hour. Bake in 375°F oven 20-25 minutes. Makes 16 buns. Work other half of dough in same manner. Any leftover dough may be made into small dinner rolls. "FERMIPAN YEAST RECIPE" TWO HOUR BUNS 3 cups water (lukewarm) 8 tbsp. sugar 6 tbsp. oil 1 tsp. salt 2 tbsp. Fermipan instant yeast 2 eggs 7-8 cups flour (enough to make a workable dough) Mix yeast and 4 cups of flour. In a separate bowl, whip eggs, sugar, oil and water. Add flour-yeast mixture. Blend well; add remaining flour and salt. Let rise for 15 minutes. Punch down. Do not knead. Let rise again for 15 minutes. Punch down and form into buns. Put buns in a greased pan; cover and let rise on kitchen counter or in a warm place 1 hour. Bake in 350F oven for 15 to 18 minutes. Makes 4 to 5 dozen buns. NOTE: Recipe may be halved. |
