Acini De Pepe Salad

Ingredients

2 1/2 cups acini de pepe or ½ bag
2 11 oz cans orange sections
1 12 oz can crushed pineapple
1 20 oz can chunk pineapple
1 bag miniature marshmallows, optional
3 tbsp. cornstarch
1 cup sugar
1 large container Cool Whip
3 eggs

Directions

  1. Cook acini in salt water. Drain, rinse with cold water.
  2. Drain fruit and save 1½ cups of juice.
  3. Add beaten eggs, sugar and cornstarch. Cook until thick and pour over acini and fruit.
  4. Mix well. Let stand 12-24 hours.
  5. Just before serving add Cool Whip and marshmallows.
