Gluten-Free Apple Spice Muffins

Ingredients

2 cups brown rice flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
2 large eggs
1/3 cup sucanat or maple syrup
2 tbsp. vegetable oil
1/2 cup rice milk
1/2 cup applesauce
1 tsp. vanilla extract
1 apple (peeled, cored and grated)
2 tbsp. sucanat
2 tbsp. cinnamon

Directions

  1. Preheat oven to 350°F. Place 12 unbleached muffin cups into a muffin pan.
  2. Sift dry ingredients in a bowl. Stir together eggs, sucanat or maple syrup, oil, applesauce, and vanilla together in a bowl. Fold into the dry ingredients. Stir in apples.
  3. Fill muffin cups 2/3 full. Mix sugar and cinnamon together and sprinkle over muffins. Bake for 20 minutes or until golden brown.
