¼ lb. country bacon, diced
2 cloves garlic, chopped
3 tbsp. olive oil
½ – ¾ cup parmesan cheese
1 lb (500g) linguine
1. Place bacon and chopped garlic in large skillet with oil. Cook on low heat for 12-15 minutes, until all fat has rendered.
2. Cook pasta until tender, drain and place in a large serving bowl.
3. Beat eggs and cheese.
4. Quickly spoon hot pasta over the bacon and garlic mixture and toss. Stir in eggs and cheese, adding salt and ground black pepper (optional).
