Summertime Hamburger Soup


  • 2 lbs ground beef
  • 1 tbsp avocado oil
  •  2 garlic cloves, minced
  • 1 small yellow onion, diced
  • 128 oz can diced tomatoes with juice
  • 1– 6 oz can tomato paste
  • 5 cups beef broth
  • 1 1/2 tsp Italian Seasoning
  • 1/4 tsp onion salt
  • Salt and Pepper to taste
  • 1 bag frozen peas
  • 1 Yellow Bell Pepper


Heat the olive oil in a 5- or 6-quart Dutch oven or large pot over medium-high. Add the onion and garlic and cook until translucent, (about 2-4 minutes) Add in the ground beef and cook until brown, 4 to 5 minutes. Transfer the bag of peas to the beef and combine together with a spoon. Add the broth, canned tomatoes (with liquid), tomato paste, bell pepper, onion salt, Italian seasoning, salt, and pepper. Stir to combine. Bring to a boil, then reduce the heat and simmer 30 minutes. Divide among bowls and enjoy!
