Shells with Parsley Basil Pesto
1 cup packed fresh Italian parsley leaves
½ cup packed fresh basil leaves
5 cloves garlic
¼ cup slivered almonds
2 tbsp. lemon juice
1 tsp. salt
¼ tsp. pepper
1/3 cup olive oil
1/3 cup grated Parmesan cheese, divided
3 cups large shell pasta
- In food processor or blender, prepare pesto – combine parsley, basil, garlic, almonds, lemon juice, salt and pepper – process just until combined. With processor running, slowly add oil, then ¼ cup Parmesan cheese; process until well blended.
- Cook shells until tender, rinse and drain well.
- Toss shells with pesto and serve topped with remaining Parmesan cheese.
